Chymotrypsin is a proteolytic enzyme. Chymotrypsin is secreted by the pancreas as the inactive proenzyme chymotrypsinogen. Chymotrypsin is a serine endopeptidase that preferentially cleaves peptide bonds on the carboxyl side of amino acids with bulky hydrophobic residues, particularly tyrosine, tryptophan, phenylalanine and leucine.
